  • Zest and juice of lime
  • White vinegar
  • Olive oil
  • Ground aji amarillo or any preferred dried pepper powder (cayenne, aleppo, ancho, habanero)
  • Garlic powder
  • Yellow curry powder
  • Kosher salt

Step-by-step instructions

  1. Cut wings from the drumettes and remove wing tips if they haven’t been already. Save wing tips for stock by freezing until ready to use.
  2. Grate lime zest and juice the lime into a large mixing bowl.
  3. Add all remaining ingredients to the bowl and mix thoroughly until wings are well coated.
  4. Let wings marinate for 8-12 hours or overnight in the refrigerator. A couple hours will still work if you don’t have that much time.
  5. Remove wings from fridge 30 minutes before cooking to bring to room temperature.
  6. Clean and preheat grill to 400°-450°F
  7. Cook wings for 10 minutes per side, watching carefully for flare-ups. You will need to flip every 10 minutes for about 4-6 times until they are finished cooking.
  8. After 30-40 minutes total cooking time, use a thermometer to ensure internal temperature reaches 165°F. Cooking time varies based on wing size and preference of char.

How to grill chicken wings

High heat around 400-450°F is ideal. Make sure your grates are oiled and be sure to flip your wings often. I typically flip sides every 10 minutes to ensure even browning and reduce flare-ups. Overall, it’s fairly simple!
