I’m obsessed with this slaw because it’s ridiculously simple but looks and tastes like you spent way more effort on it. With just four ingredients and about 10 minutes total, you’ve got a crunchy, refreshing side dish that pairs perfectly with tacos, grilled meats, fish, or literally anything that needs a pop of color and flavor. 

Plus, it’s naturally gluten-free, dairy-free, and low-carb, and so on—so it works for pretty much everyone at your table.

What makes purple cabbage turn bright purple after adding lime

Purple cabbage contains anthocyanins, which are natural pigments that change color based on pH levels. When you add acidic lime juice to the cabbage, it turns the most vibrant magenta-purple color—it’s honestly so satisfying to watch! 

Salting the cabbage first helps break down the cell walls, which makes the color change even more dramatic. This same principle is why purple cabbage is often used as a natural pH indicator in science experiments.

Ingredients

Purple cabbage. Also called red cabbage, look for firm heads with vibrant color.

How to Make

1. Prep the Cabbage

  • Using a mandoline, shred half a head of purple cabbage very thin for the best texture.
  • Transfer shredded cabbage to a large bowl.
  • Sprinkle with 2  teaspoons of kosher salt and toss to coat evenly.
  • Let the salted cabbage rest for 5 minutes to draw out moisture and soften.

2. Make the Honey-Lime Dressing 

  •  In a separate bowl, combine 4 tablespoons of honey and the juice of 1 lime 
  •  Whisk thoroughly until the honey is completely dissolved into the lime juice

3. Combine and Mingle Flavors

  • Drizzle the honey-lime dressing over the salted cabbage 
  • Toss everything together until the cabbage is evenly coated 
  • Let the slaw rest for 5 minutes and watch as the cabbage turns bright purple 
  • Give it a final toss before serving
